Vegan Chocolate Raspberry Nice Cream

MY GOODNESS! I am finally getting on board with the banana nice cream craze.  I know, I’m like super behind and as a vegan I should have already been a part of the nice cream movement. Alas, I am here for it now!  I don’t have a food processor and I never thought I could really make it in my blender because isn’t it just a smoothie then? FALSE! It takes some patience but it can be done. I am so excited that I can now make nice cream and feel confident about it!  

Today Kellie and I made nice cream and it was the perfect midday snack with zero guilt! I started with frozen bananas and frozen raspberries.  I just filled my blender cup with the fruit and then added in all of the other ingredients! You want to add as little liquid as possible because if you add too much it will thin out and be soupy instead of a replacement for a soft serve ice cream.  You can also take this recipe in your own direction!  If you prefer blueberries to raspberries or you would rather leave out the cocoa and sub in vanilla protein powder go right ahead!  There are endless combinations for banana nice cream that I’m sure you’ve seen all over social media.  

After you make the nice cream, make sure to top off your snack with lot’s of yummy toppings!!  My choice was a handful of frozen raspberries, chia seeds, chopped almonds, and a drizzle of cashew butter! Next time I want some nice cream I will be adding some nut butter right into the blender so it gets extra creamy. 

Pro tip: If you want to add any toppings be sure to prepare those BEFORE you make your nice cream so you aren’t letting your beautiful snack melt while you slice strawberry roses for that insta pic (because obvi this is going to be an instagram worthy snack!)

ingredients:

 

1 cup frozen bananas

1/4 cup frozen raspberries

1 heaping tbsp cacao powder

1/2 tbsp maple syrup (add more or less for your liking of sweetness)

1-3 tbsp water (start with one tbsp, add more as needed)

If you have a food processor you can toss all these ingredients into your processor and blend them up while scraping the sides when necessary. If you don’t have a food processor and are using a blender (like I am) add all of your ingredients to your smallest container.  I have a Ninja Nutribullet so I just used the squatty blender container that comes with the base.  

 

After you add all your ingredients pulse the blender and slowly get the frozen fruit shaved down so it begins to get creamy and blend together.  You may have to take the blender off and stir it regularly to get it to the right consistency.  Again, be cautious of how much water you add.  The more water you add will cause it to blend more quickly but will also make it soupy rather than thick and creamy. 

 

Once you have blended to the perfect consistency drop the nice cream in your favorite bowl, add your toppings, snap a pic (optional), and enjoy!! This is literally one of the most satisfying things you can eat and it is actually good for you!
